[Follicular Phase] Pomegranate Bircher Muesli {easy & plantbased}

 

 

The next phase in your cycle is the follicular phase (7-10 days). During this phase the follicles in your ovary mature and estrogen levels increase to thicken the uterine lining so that it is prepared to host an egg. All hormones are at low levels right after your bleeding but they’re slowly starting to increase during this phase.

Focus on fresh and light foods to help you feel energized. I try to make sure I eat lots of veggies, like huge salad bowls with fermented foods like pickles and sauerkraut and I add some form of lean plantbased protein like tofu or tempeh. Whenever I want a warm meal I love to make a hearty vegetable stew with mung beans or green lentils. I’ll also have organic eggs if I feel like it during this phase. In terms of movement I try to get back to a more dynamic exercise routine with dynamic yoga sequences and/or HIIT workout sessions.

 

 

 

 

Pomegranate Bircher Muesli: Serves 1

 

1 ripe pineapple

1 pomegranate

300 g of cashew yoghurt

4 tbsp of oats (I used gluten free oats)

2 tbsp of ground flax seeds

1 generous handful of brazil nuts

1 tsp of hemp seeds to sprinkle on top

 

 

 

 

Cut the pineapple into small chunks and place them in a large bowl together with the pomegranate seeds. Roughly chop the brazil nuts and add them to the bowl with the oats and flax seeds. Add in the cashew yoghurt and mix everything together. This recipe is measured for more than one portion so make sure to grab a few food containers (I prefer glass containers) to have some breakfast waiting for you in the fridge on the next day or two.
